Avocado Toast with Bacon, Scrambled Eggs and Goat Cheese

Ingredients

  • Optional garnishes: pickled peppers or favorite hot sauce
  • 4 pieces Smithfield® Fully Cooked Applewood Smoked Thick Cut bacon
  • slices ciabatta (or other artisanal bread)
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • garlic clove, peeled
  • avocado, sliced
  • lime, juiced
  • eggs, scrambled
  • 4 oz.goat milk cheese
  • 1/8 cup fresh cilantro leaves
  1. Preheat oven to 350°F.
  2. Brush bread slices with olive oil and season with salt and pepper. Bake in oven until warmed and lightly browned. Remove and rub with garlic cloves.
  3. Top each piece of toast with sliced avocado, brush with lime juice, and season with salt and pepper.
  4. Add scrambled eggs, followed by goat cheese and bacon. Garnish with fresh cilantro leaves along with your favorite condiments for added flavor.
