Pork Fajitas Nachos


  1. 2 lbs. Smithfield Fresh Pork Tenderloin
  2. 2 packets of fajita seasoning
  3. 1/4 cup water
  4. 1 tbsp oil
  5. 1 red onion
  6. 1 bell pepper (any color)
  7. 1 cup shredded cheese
  8. 1 bag tortilla chips

Optional toppings:

  1. Avocado
  2. Jalapeno slices
  3. Sour cream


  1. Place pork tenderloin, fajita seasoning and water in a slow cooker. Cook for 5 to 6 hours on high or 10 to 12 hours on low.
  2. Shred the pork and put it back in the slow cooker with the sauce while you prep the other ingredients.
  3. Preheat your oven to 350. Slice the peppers and onion, add oil and sauté on medium heat for about 20 minutes or until the peppers and onions are tender.
  4. Spread the tortilla chips on a baking sheet and top with shredded pork, peppers & onions and cheese. Bake for 5 minutes.
  5. Top it off with any additional ingredients, plate and enjoy!
